Fully resistant to SyXIP-I
A mutant of FgXyn11C obtained by site-saturation mutagenesis that retains high enzymatic activity while exhibiting complete resistance to the xylanase inhibitor SyXIP-I in cereal flour, overcoming the inhibition problem of endogenous xylanases in grain processing.
